  • 400 grams lamb shoulder, cut into 4cm chunks
  • 200 grams ground beef
  • 250 grams cremini mushrooms, halved
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoons fresh ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoons ground cumin
  • 1 teaspoons ground coriander
  • 0.5 teaspoons turmeric
  • 0.3 teaspoons chilli flakes (optional, mild heat)
  • 2 tablespoons tomato paste
  • 400 milliliters beef stock
  • 3 tablespoons neutral oil
  • 1 teaspoons salt and pepper
  • 4 large flour tortillas
  • 120 grams aged cheddar, grated
  • 150 milliliters sour cream
  • 2 tablespoons fresh dill or parsley, finely chopped
  • 1 garlic clove, minced (for sour cream)

Make the herbed sour cream: Mix 150 milliliters sour cream with 2 tablespoons fresh dill or parsley, finely chopped and 1 garlic clove, minced (for sour cream). Season with salt. Refrigerate until needed — this improves as it sits.

Sear the lamb: Pat the 400 grams lamb shoulder, cut into 4cm chunks dry and season well with 1 teaspoons salt and pepper. Heat 3 tablespoons neutral oil in a heavy Dutch oven over high heat. Sear lamb in batches until deeply browned on all sides, about 3–4 minutes 04:00 per batch. Remove and set aside. Don't rush this — the browning is where a lot of the flavour comes from.

Brown the beef and build the base: In the same pot, brown 200 grams ground beef, breaking it up. Add 1 large onion, diced and cook until softened, about 9 minutes 09:00. Add 4 garlic cloves, minced and 1 tablespoons fresh ginger, grated, cook 2 minutes more. Add 2 teaspoons garam masala, 1 teaspoons ground cumin, 1 teaspoons ground coriander, 0.5 teaspoons turmeric, and 0.3 teaspoons chilli flakes (optional, mild heat) — stir and cook the spices in the fat for 1–2 minutes until fragrant. Add 2 tablespoons tomato paste and stir to coat everything.

Braise low and slow: Return the seared lamb to the pot. Pour in 400 milliliters beef stock — just enough to come halfway up the meat. Bring to a simmer, cover tightly, and braise on the lowest heat possible (or in a 160°C / 325°F oven) for 2.150 minutes 150:00. You want the lamb to shred easily when pressed with a spoon.

Shred and reduce: Remove the lamb chunks and shred them with two forks, discarding any large fat pieces. Return the shredded lamb to the pot. If the sauce is thin, simmer uncovered over medium heat for 10–12 minutes 12:00 until thick and almost jammy — it needs to hold in a wrap without being soupy.

Roast the mushrooms: Toss 250 grams cremini mushrooms, halved with a little oil and salt on a baking tray. Roast at 220°C / 425°F for 20 minutes 20:00 until golden and slightly caramelized. Don't skip this step — roasting concentrates the flavour and removes moisture so the wrap doesn't go soggy.

Build and crisp the wrap: Lay a 4 large flour tortillas flat. Add a generous scoop of the lamb curry down the centre, top with roasted mushrooms and a handful of 120 grams aged cheddar, grated. Fold and roll tightly. Heat a dry skillet over medium-high and press the wrap seam-side down for 2–5 minutes 05:00 per side until golden and crispy and the cheese melts inside.

Finish and serve: Slice the wrap on the diagonal. Add a generous dollop of herbed sour cream on top (not inside — The Manx puts it on top). Serve with fries or a simple green salad.
