- 2-3 links pork sausages, removed from skins (try to use sausage with extra flavor)
- 1 large onion, finely chopped
- 2 garlic cloves, chopped
- 2 celery stalks, diced
- 1 carrot, peeled and diced
- 3 tablespoons tomato paste
- 4 cups chicken or vegetable stock
- 1 (15-ounce) can navy or cannellini beans, rinsed and drained
- Salt and freshly ground black pepper

- tomatoes that have seen better days, chopped
